raspberry granita

Alright…here it is. The dessert I promised you.

This is what you need: ice, 1/2 c sugar, 2 6oz containers of raspberries and 1/4 c water

Meg’s restaurant uses blackberries…but we could only find raspberries in the store. I’m interested in trying blueberries. Do you think that would be weird? I think pretty much any berry would work.

So, add your raspberries and 1/2 c sugar to a small sauce pan. Set it on a medium low heat and let it cook down.

After about 15 minutes or so it should be cooked down. I used a potatoes masher to help speed up the process and get rid of any lumps.

Now you wanna get those seeds out. Use your little strainer or sieve and get those babies out of there.

Put the seedless raspberry juice back in your saucepan and add about 1/4 cup water. Put it on low heat and allow it to reduce and thicken. The key is allowing it to cook LOW and SLOW.

My blender sucks so I have been using my food processor to crush my ice. I’m not sure if that's very good for my blade so I place the ice in a Ziploc bag and beat the heck out of it to break the ice up. Then I place the crushed ice into the food processor and blend it until it is very fine like snow.

Just to be fancy we used a margarita glass. I promise it tastes just as good in an old bowl!

When your raspberry sauce has reduced allow it to cool. We don’t want it melting the ice.

After it’s cooled pour it on over your ice. This is what the sauce should look like.

The last step is to add a dollop of whip cream. I skipped this step on mine. The combo weirds me out. Reminds me of when my babysitter once made me eat Jello and whip cream mixed together. BARF!

Sorry, I shouldn’t say such things while I’m sharing a beautiful recipe with you!

If you are not freaked out by such things…add on that whip cream and dig in!
