You guys…I went to the gym today and ran for 20 minutes.
20 minutes straight.
Yeah…all together it was only one and a quarter mile…but I have never ran for that long.
I usually stop because I want to barf or am bored.
I am not a runner.
So I am proud of myself today.
Now the goal is to not let that 20 minutes be my peak running time
Now that I have gone to the gym I can talk to you about food.
As if that ever stopped me before
And I also made salted caramel chocolate mousse
It was WONDERFUL!
I even felt like I messed up a couple times while putting it together.
Whipped my egg whites too early so they started to break down by the time I folded them into the chocolate.
I also used only 4oz of chocolate versus the 7oz it calls for.
Turns out it is a very forgiving recipe.
And you feel so fancy cause the first step is to make your own caramel.
Super easy and smells so good.
And even though the recipe calls for white sugar…I am imagining it’s healthier than a processed brownie mix that you cook in the microwave.
Although…I’ve had my share of those too
Total side note.
Those little dishes I used for the mousse…they are pampered chef prep cups.
OMG…MY HUSBAND JUST SPILLED HIS ENTIRE CUP OF TEA ON THE CARPET!
Now he is leaning over my shoulder laughing.
Okay…back to the prep cups.
I ordered a can opener and garlic press from pampered chef about six months ago (thanks to the recommendation of my sweet friend Serena).
They promptly arrived in the mail.
Then about a week later another package came in the mail from pampered chef.
It happen to be these prep cups.
I called the company because I hadn’t ordered them and they had no idea how they got sent to me.
I even inquired as to who made the purchase…thinking it might have been a friend.
I had no idea who the person was. No idea.
I offered to send them back but…
Pampered chef said it was a mistake, they were sorry and that I was now the proud new owner of six prep cups.
How awesome is that?
They have measurements on them, are microwave, freezer and oven safe and even have little lids.
Gotta love when little blessings like that happen.
